Strawberry Pimm’s Cup from Trifecta’s Eddie Riddell

 1 ½ oz Pimm's #1
 1 oz dry gin
 1 oz strawberry shrub recipe below
 Splash of lemon juice
 Splash of simple syrup
Strawberry Shrub
 1 cup Oregon strawberries, stemmed and chopped
 1 cup granulated sugar
 1 tbsp crushed black pepper
 ½ cup champagne vinegar
  cup apple cider vinegar

For Strawberry Pimm's Cup
Shake all ingredients and serve over ice in a Collins glass. Garnish with fresh mint, fresh strawberries and a lemon wedge.

For Strawberry Shrub
Add the strawberries, sugar and crushed black pepper to a bowl. Mix and let macerate overnight. Add champagne and apple cider vinegar. Let steep for a few more hours or overnight. Strain and refrigerate until ready to use.
