There are bagels, and then there are Bowery Bagels. Located in the heart of downtown Portland, this little bagel shop pipes out some of the best New York-style Kosher bagels in the state. Founded by a transplanted New Yorker with an intent to replicate bagels fondly remembered from childhood, these hand-rolled gems are boiled in small batches after a long proof, then baked, creating the perfect light crunchy exterior and chewy interior. Strongly suggested for breakfast is a bagel with housemade Gravlax, salmon that is cured but not smoked, allowing for more of a pure salmon-flavored profile. Bowery Bagel owner Michael Madigan created a recipe for Gravlax that uses fresh dill, chopped fennel leaves and Clear Creek Distillery’s Eau de Vie of Douglas Fir vodka in its preparation. With cream cheese and red onion, centered on a seeded bagel, this is a little slice of New York.
