8 Ways to Make Grilled Chicken This Summer

During the warm summer months, most people answer the question, “What’s for dinner tonight?” with “Let’s throw some chicken on the grill.” Boneless, skinless breasts are purchased, pounded flat, seasoned with salt and pepper, brushed with olive oil, and grilled over direct medium heat for 10-12 minutes. Now what?
Take your boring grilled chicken breasts in one of these easy and delicious directions for a quick summer meal.
Stir together a peeled and diced mango, a diced peach, a chopped tomato, a handful of minced red onion, a handful of chopped cilantro, a pinch of red pepper flakes and a squeeze of lime. Spoon over the top of chicken breasts and serve alongside grilled corn-on-the-cob.
Green on Green Salad
On top of a bed of green leaf lettuce, place a handful of each of these ingredients: cucumber, celery, avocado, toasted walnuts, crumbled Gorgonzola and diced chicken. Toss with your favorite vinaigrette.
On a baguette sliced horizontally for sandwiches, spread goat cheese on the top bread slice, fresh pesto on the bottom, and thick slices of tomatoes and sliced chicken in the middle.
Roll sliced chicken up in a warm tortilla with sautéed onions and red peppers, a scoop of fresh salsa, sliced avocado and a few cilantro leaves.
Pasta and Roasted Tomatoes
Toss together: One or two pints of cherry tomatoes, 3-4 peeled and sliced garlic cloves, olive oil, salt and pepper, and 4-5 sprigs of fresh thyme. Lay them in a single layer on a cookie sheet. Roast at 400 degrees for 10-15 minutes. Serve the roasted tomatoes over pasta topped with sliced chicken breast.
Using two forks, shred the chicken. Mix with your favorite, warmed barbecue sauce until well coated. Serve on warmed buns with a scoop of coleslaw.
Quick Curry Style
Mix a scoop of mayonnaise with a pinch or two of curry, a squeeze of lemon, and a few shakes of black pepper. Toss with diced chicken breast and golden raisins. Scoop onto flatbread, top with butter lettuce.
Sauté diced onion, celery and carrots seasoned with salt and pepper. Stir in minced chicken breast. Mix well with favorite Asian/Hoisin sauce and serve wrapped up in lettuce leaves.
